Ho letto il libro di Luciano Pradal  “Chronicles of an Ottawa Chestnut Lover” (http://turismoincanada.blogspot.it/2013/11/cronaca-di-un-caldarrostaio.html)

The Bread of the Poor
Once a person has savoured a chestnut, I suggest savouring it with some cheese because chestnuts were called the “bread of the poor or the bread from heaven!” Chestnut trees are big and they produce a lot of chestnuts. When they fall it looks like heaven is giving them to mankind.
I tried eating chestnuts with every kind of cheese: Italian, French, hard, soft. I found the ideal combination to be chestnuts and a little morsel of the six year old Perron cheddar cheese that’s made in Quebec and sold at “La Bottega”. I usually chew chestnut and cheese together. I turn them into my mouth until they are well mixed. I savour the flavor and then I wash it down with a sip of red wine.
Simply sensational!
Most of the time, before I have even finished talking the person goes into “La Bottega” and comes out a few minutes later with the six years old Perron cheddar cheese.
“And the red wine ?” I ask.
“I got some at home”
Or,
“I will buy it on the way home!
